Chilaquiles (May's favorite breakfast) are a traditional Mexican dish that dates back to the Aztec times, serving as a delightful way to utilize leftover tortillas. To create chilaquiles, slightly stale corn tortillas are cut into quarters and lightly fried to form the base of the dish. These crispy tortilla pieces are then simmered in a green or red salsa, softening them slightly while infusing them with flavor. The result is a harmonious blend of textures and tastes, further enriched by various toppings such as shredded chicken, scrambled or fried eggs, sour cream, queso fresco or cotija, chopped onions. Chilaquiles are often garnished with avocado slices and served with refried beans, making them a popular choice for breakfast or brunch, though they're enjoyed at any time of day.
